Turmeric & Red Lentil Dal
So — I bravely grabbed a package of organic red lentils thinking they could keep well for awhile if stores did end up closing down for awhike …. I recalled reading that these lentils are gluten-free AND fairly high in protein (approx 1 gram per TBSP, not bad). PLUS- let’s just admit, they are PRETTY.
Alright… so then I went in search of recipes and quickly realized most red lentil recipes are soups- which just isn’t doing it for me right now…. And then BOOM, I found this one for Turmeric and Red Lentil Vegetarian Dal (one-pot!).
Hi -yes - you had me at ONE POT.

This dish did NOT disappoint. It was easy AND it is SO good. Highly recommend.
